December Inspirations

So this is my first post since I came up with the list…

 

I have three items on my list that require me to do something or try something each and every month this year:

1. Find something or someone in my life to be thankful for

2. Find an inspirational quote quote each month and see how it applies to the next 30 days

3. Try a new recipie every month.

I have decided to refer to these three things as my monthly inspirations… So let’s see what fun December has brought shall we!

This month’s quote is brought to you by Mr Hugh Laurie…

As a person who really truly hates feeling unprepared for anything and for who winging it is more of a personal challenge than anything else, I can relate to the above.

Things in life rarely happen at a time when we are prepared for them, but to be honest, maybe that’s part of the fun.

Good surprises as so good for that reason. They force you to accept an unprepared and unplanned positive moment into your life.

I think that the feeling of being unprepared genuinely holds most of us back in life. Whilst I’m not suggesting everyone starts rashly misbehaving, I think that many us don’t achieve all of our personal goals for this reason.

The quote above is really the point of my list for 2015 and therefore I thought it was at that it should start me off…

 

This month I am thankful for the Girl-love of my life – Rockin Rocky Shirazi aka hometown bezzie and general partner in crime… 

Rox is a genuine rare gem of a friend and I feel so lucky to have had her in my life, through thick and thin, for the last 12 years.

Rox, you mean the world to me and you’re like a second sister to me. The fact that we stay so close despite living on the other side of the world from one another just goes to show how good a friend you are.

I am thankful for your friendship, your support, your ability to make me laugh even when life has not been going my way… I’m thankful for all the good times we have shared and excited about the ones we will share in the future.

I miss you, without fail, every single week and am so sad that I can’t be there in person to say this, so this blog post will have to do…

HAPPY 30th BIRTHDAY lovely girl.

This month I decided to try cooking not one but two new recipes! Starting out strong. I guess it worked out more like trying out a dinner rather than a recipe.

I made Slow and Sticky Veal followed by Boozy Caramelised Pineapple…

So here come some gratuitous, poorly taken food shots… I can pretty much guarantee that it all tasted far better than it looks, presentation is not something I put too much effort into… that just wastes good solid tasting time!

Slow and Sticky Veal 

Recipe taken from the back of the woolies meat wrapper…

  • Rub 400g sliced osso bucco with oil and brown on high heat
  • In a separate pan combine 1 thinly sliced red onion, 1 tbsp soy sauce, 2 sliced garlic cloves, 1/2 tbsp sliced ginger, 150ml beef stock, 1 tbsp sweet chilli sauce, 1 tsp hoisin sauce
  • Bring to boil, reduce heat to low, cover and simmer until tender (1.1,5hours)
  • Increase heat and remove lid to reduce and thicken sauce
  • Serve with rice, shredded red chilli and coriander
 
I’ve never cooked osso bucco before, it has a very high fat content so should be good for slow cooking…
 
And ta da the end result…
Super tasty, oh so yum! Enjoyed with a rather large glass of Malbec…

Sweet summery fruit, spicy syrup and creamy frozen yoghurt… Om Nom Nom…
So this is what goes into it… all nice and simple…
It’s essentially just chopped fruit cooked in alcoholic syrup… I’m always a bit undecided about the look of star anise. Sometimes I think they look pretty and other times I think they looks a bit like big hairy spiders…
 
Despite my comment above about presentation, I did decide to try and cut the pineapple nicely, as per the recipe photos… I’m not sure mine was quite as fancy looking, but it was fun. It also put my fancy Shun knives to work too…
 All ready for the oven…
 And voila… the end result…
I let it go cold and served it with Weiss vanilla frozen yoghurt. The syrup was super sweet a d the tartness of the yoghurt cut through it perfectly. I just have a lot left… Such a shame 😀
I would say the verdict was that it was all super tasty and can be added to the list of things to repeat in the future…
 
So that’s all for now… until the 28th when I head out to tick another item off the list…
